Michelle Humes of fine furious life wrote this recipe, even going so far as to use beets to make a non- sweetened yet delightfully disturbing deep pink mashed- potato frosting. It’s genius, and so is she, and not only for her opinion on the brussels sprout. (About which, by the way: word.)
With some mild alterations (turkey, because of allergies, and only white frosting, because I doubt Sam would eat the pink) this is on the top of my “To Cook While Home” list. Were I home right now I would totally make this for Kiddo’s birthday.
